How to Make Spanish Saffron Shrimp

1 tray OceanBox Shrimp
15 oz can tomato sauce
15 oz can coconut milk
1 large white onion
4 cloves garlic chopped
Kosher Salt
cracked pepperTomato paste
Olive Oil
Saffron
Optional – red pepper flakes or spanish chiles or your favorite hot sauce
Directions
- Heat a large sauce pan or medium size pot on medium-low
- Add 3 tblsp olive oil and the white onions.
- Fry, fry , fry low and slow until the onions are soft and translucent.
- Add the chopped garlic, stir and let simmer for another 5 mins
- Turn heat to medium-low
- Add the tomato paste and stir until dark red color
- Add the tomato sauce and stir until dark red color.
- Add the coconut milk, saffron, optional red pepper, salt & pepper, and let simmer for another 10 min
- Simmer on low and set aside for later for easy prep.
- Fold in the shrimp on medium heat until cooked. (approx 5 mins)
- Serve with rice, bread or pasta.
