* 1 tray fresh OceanBox halibut
* 1 tablespoon olive oil
* ½ cup white wine
* 4 tablespoons butter, divided
* 1 teaspoon chopped garlic
* 3 tablespoons capers, drained
* 2 tablespoons lemon juice
* 3-4 lemon slices
* 2 tablespoons fresh flat-leaf parsley
* salt and pepper to taste
- Season the halibut with salt and pepper.
- Heat oil in a large skillet over medium-high heat.
- Add butter to the skillet. Once it starts to slightly brown, add the halibut, top side down. Sear until nicely browned, about 4 minutes.
- Add lemon slices to the skillet as the fish cooks for another 3-4 minutes. Fully cooked halibut is opaque and firm and will flake easily with a fork.
- Once the halibut is done cooking, transfer the fish and lemon to a plate.
- Keep the heat at medium and pour wine into the pan, bringing it to a boil while scraping browned bits off the bottom of the skillet. Cook until the wine is almost completely evaporated.
- Add lemon juice, capers, and parsley. Cook for a minute, then remove from heat and add in 2 tablespoons of butter, stirring to combine.
- Return the halibut to the skillet and spoon the sauce over the fish to coat. Cook for 1 more minute, then serve and enjoy! ✨
