  • 2 OceanBox Norwegian salmon fillets 
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ¼ cup cream cheese (softened)
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 1 tsp lemon zest (optional)
  • Fresh dill or parsley for garnish (optional)

  1. Preheat the Oven
    Preheat your oven to 375°F (190°C).

  2. Sauté the Spinach
    In a medium skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

  3. Prepare the Spinach Mixture
    In a small bowl, combine the cooked spinach with cream cheese, Parmesan cheese, lemon juice, and lemon zest. Season with salt and pepper to taste. Mix until well combined.

  4. Prepare the Salmon
    Lay the salmon fillets flat and carefully slice them horizontally to create a pocket (avoid cutting through completely). Stuff the pocket with the spinach mixture.

  5. Bake the Salmon
    Place the stuffed salmon fillets on a greased baking sheet or in an ovenproof dish. Season the top of the salmon with a bit of salt and pepper. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  6. Garnish and Serve
    Once cooked, garnish with fresh dill or parsley and a squeeze of lemon juice, if desired.
