- 1 package cherry tomatoes
- 3 garlic cloves, minced
- 1/2 tsp cumin
- 1 tsp oregano or 2 sprigs fresh oregano
- Zest of half a lemon
- 1 tbsp lemon juice
- 3 tbsp high-quality olive oil
- Garlic, dried oregano, dill, parsley
- Olive oil
- Salt and pepper
- Heat olive oil in a pan on medium-high heat.
- Season the Bronzini with salt and pepper, then cook skin side down until crispy (about 4 minutes).
- Flip the Bronzini and cook for another 3 minutes until opaque.
- Prepare broiled tomatoes by mixing cherry tomatoes, olive oil, minced garlic, cumin, oregano, and lemon zest. Pierce tomatoes and broil or sauté for 15-20 minutes.
- Make the ledolemono sauce by mixing lemon juice and olive oil, optionally adding garlic, oregano, dill, or parsley.
- Plate as desired, adding arugula to the tomatoes and drizzling the sauce on top. Enjoy!
