When the salmon is high quality and fresh, simple recipes like this shine. No long marinades, no complicated steps, just pantry staples and great fish.

Directions:

  1. Preheat your oven to 400°F.
  2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, melted butter, garlic, salt, and black pepper.
  3. Lightly oil a cast iron skillet and place the salmon fillets skin-side down.
  4. Spoon the honey Dijon sauce generously over the salmon, letting extra sauce pool around the fillets.
  5. Bake uncovered for 12–14 minutes, until the salmon flakes easily and remains tender.
  6. Spoon the pan sauce over the salmon before serving.
Optional: broil for 30–60 seconds for light caramelization.
