This fresh and healthly dish has origins in many spanish and mediteranean cookbooks and family recipes. It is easy to make and happily serve a hungry crowd.
Directions
Heat heavy pan to medium-high heat
Add olive oil, diced onions, salt, pepper, chili flakes and olives to hot pan.
Sauté until the onions are translucent
Push the sauté aside, add a few drops of olive oil and place the Black Sea Bass skin side down.
Sear for 3-4 minutes and carefully flip
Add the tomato sauce, chick peas and thyme
Reduce heat to low and simmer for 10 minutes
Serve over rice, couscous, quinoa, pasta or your favorite pairint
