Elida's Spanish Saffron Shrimp

This fresh and healthly dish is easy to make and is sure to be a crowd pleasure. Make the sauce ahead of time and quickly cook the shrimp to serve.

Directions

  1. Heat a large sauce pan or medium size pot on medium-low
  2. Add 3 tblsp olive oil and the white onions.
  3. Fry, fry , fry low and slow until the onions are soft and translucent.
  4. Add the chopped garlic, stir and let simmer for another 5 mins
  5. Turn heat to medium-low
  6. Add the tomato paste and stir until dark red color
  7. Add the tomato sauce and stir until dark red color.
  8. Add the coconut milk, saffron, optional red pepper, salt & pepper, and let simmer for another 10 min
  9. Simmer on low and set aside for later for easy prep.
  10. Fold in the shrimp on medium heat until cooked. (approx 5 mins)
  11. Serve with rice, bread or pasta.

  • 15 oz can tomato sauce
  • 15 oz can coconut milk
  • 1 large white onion
  • 4 cloves garlic chopped
  • Kosher Salt
  • cracked pepperTomato paste
  • Olive Oil
  • Saffron
  • Optional – red pepper flakes or spanish chiles or your favorite hot sauce
