Directions

  1. Cook the bacon until crispy, then let it rest of paper towels to firm up
  2. Remove the skin from the salmon, pat dry, brush with oil, and coat generously with blackening spice
  3. Reheat the pan with a little bit of bacon fat (don't wipe it all out-trust us)
  4. Cook the salmon over medium-high heat, undisturbed, until the first side blackens. Flip and finish cooking.
  5. Mix mayo with chopped herbs, if using
