Lemon Butter Cod with Blistered Tomatoes

6 Steps

Lemon Butter Cod with Blistered Tomatoes is a light, flavorful dish that comes together in about 20 minutes, making it perfect for an easy weeknight dinner. Tender, flaky cod fillets are pan-seared until golden, then finished in a bright lemon butter sauce with sweet blistered cherry tomatoes, garlic, and fresh herbs. This simple cod recipe highlights the delicate flavor of fresh cod while adding just the right balance of richness and acidity. Serve it with rice, crusty bread, or roasted vegetables for a restaurant-quality seafood dinner you can easily make at home.

Instructions:

1. Season the cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.

2. Sear the fish: Heat olive oil in a large skillet over medium-high heat.

Add the cod fillets and cook for 3–4 minutes per side, until lightly golden and just cooked through. Remove from the pan and set aside.

3. Blister the tomatoes: In the same skillet, reduce heat to medium and add butter.

Add cherry tomatoes and cook for 3–4 minutes, stirring occasionally, until they begin to blister and soften.

4. Build the sauce: Add minced garlic and cook for 30–60 seconds until fragrant.

Stir in lemon juice and a pinch of red pepper flakes if using.

5. Finish the dish: Return the cod to the skillet and spoon the lemon butter and tomatoes over the top.

Cook for another 1–2 minutes to warm through.

6. Garnish and serve: Top with fresh parsley and lemon slices. Serve immediately with crusty bread, rice, or roasted vegetables.
