If you’re looking for a quick dinner that still feels bright, fresh, and satisfying, this Lemon Garlic Salmon with Sweet Corn is the perfect recipe to have in your rotation. In just 20 minutes, our salmon fillets are pan-seared until golden and served over buttery sweet corn with garlic, fresh herbs, and a squeeze of lemon.
Instructions:
1. Season the salmon: Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.
2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook for about 4–5 minutes, until the skin is crispy. Flip and cook another 2–3 minutes until just cooked through. Remove from the pan and set aside.
3. Make the corn mixture: In the same pan, reduce heat to medium and add the butter. Once melted, add the garlic and cook for 30 seconds until fragrant.
Stir in the corn and cook for 3–4 minutes until warmed through and lightly sautéed.
4. Finish with lemon and herbs: Add the lemon juice, parsley, and scallions. Stir to combine and season with a pinch of salt and pepper if needed.
5. Assemble: Spoon the warm lemon-garlic corn onto plates and place the salmon fillets on top. Serve with lemon wedges.
