Directions

  1. Make the Pico de Gallo: In a bowl, combine diced tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Mix and let sit while you prepare the shrimp.
  2. Cook the Shrimp: Pat shrimp dry and toss in a bowl with olive oil, chili powder, cumin, garlic powder, salt, pepper, and lime juice. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side, until pink and lightly seared. Remove from heat and sprinkle with fresh cilantro.
  3. Assemble the Lettuce Cups: Lay out lettuce leaves on a platter. Fill each with a spoonful of shrimp, a small scoop of pico de gallo, and a few red onion slices. Add extra lime wedges on the side for squeezing.

  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt & black pepper to taste
  • Juice of 1 lime
  • Chopped fresh cilantro, for garnish
For the Lettuce Cups 🥬
  • 1 head butter or Bibb lettuce (leaves separated and washed)
  • 1/4 red onion, thinly sliced
  • Lime wedges, for serving
For the Pico de Gallo 🌶️
  • 1 cup diced tomatoes
  • 1/2 cup diced white onion
  • 1 small jalapeño, finely chopped (seeds removed for less heat)
  • 1/4 cup chopped cilantro
  • Juice of 1/2 lime
  • Salt to taste
