Directions

  1. Prep the Marinade: In a bowl, whisk together olive oil, lemon juice, garlic powder, oregano, salt, and pepper. Add swordfish chunks and toss to coat. Let marinate for 15 minutes.

  • 1.5 lbs OceanBox swordfish fillets, cut into 1.5-inch cubes
  • 1 yellow bell pepper, chopped
  • 1 green pepper, chopped
  • 1 small red onion, cut into chunks
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh dill, for garnish
  • Wooden skewers (soaked in water for ~20 minutes)

For the Herby Dill Yogurt Sauce

  • 1 tbsp fresh dill, chopped
  • 1/2 cup plain greek yogurt
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • Salt & Pepper to taste
