Salmon with Capers & Lemon
This fresh, easy recipe is perfect for spring. Crisp pan-seared salmon gets a flavorful punch from briny capers and bright lemon, served over a bed of peppery arugula. It's fast, flavorful, and ideal for a weeknight dinner or light lunch.

Pat your salmon fillets dry. Season both sides with salt and pepper.
Heat olive oil in a non-stick or cast iron skillet over medium-high heat. Once hot, place salmon fillets in the pan
Cook 3-4 minutes per side, or until golden on the outside and just cooked through
During the last minutes of cooking, add capers and squeeze in juice from half a lemon. Let it sizzle to release flavor in the pan.
Arrange the arugula on plates and top with cooked salmon. Spoon any pan juices and capers over the fish. Finish with a light drizzle of olive oil or balsamic glaze if desired.
