Salmon with Capers & Lemon

This fresh, easy recipe is perfect for spring. Crisp pan-seared salmon gets a flavorful punch from briny capers and bright lemon, served over a bed of peppery arugula. It's fast, flavorful, and ideal for a weeknight dinner or light lunch.

Directions

  1. Pat your salmon fillets dry. Season both sides with salt and pepper.
  2. Heat olive oil in a non-stick or cast iron skillet over medium-high heat. Once hot, place salmon fillets in the pan
  3. Cook 3-4 minutes per side, or until golden on the outside and just cooked through
  4. During the last minutes of cooking, add capers and squeeze in juice from half a lemon. Let it sizzle to release flavor in the pan.
  5. Arrange the arugula on plates and top with cooked salmon. Spoon any pan juices and capers over the fish. Finish with a light drizzle of olive oil or balsamic glaze if desired.

  • 2 lemon wedges (for serving)
  • 2 cups fresh arugula
